Watermelon Salsa

Looking for a new dish to bring to that summer holiday picnic? Want a refreshing topping for grilled fish or a healthy snack? While I’ll admit I thought this sounded like a really odd combination, the result was refreshing and full of flavor. Easy to make and a beautiful presentation to boot.
Watermelon Salsa
(makes eight ½ cup servings)
Ingredients:
3 cups finely diced seedless watermelon
2 jalapeno peppers, seeded and minced (include some seeds if you like heat)
1/3 cup chopped cilantro, (about 1/2 bunch)
1/4 cup lime juice
1/4 cup minced red onion, (about 1/2 small)
1/4 teaspoon salt, or to taste
Prep:
- Place watermelon, jalapenos, cilantro, lime juice and onion in a medium bowl; stir well to combine.
- Season with salt just before serving.
- Serve at room temperature or chilled.
Note: Because watermelon can easily get juicy on you, if you’re not planning to serve this right away you may want to pour the mixture into a strainer just before serving to remove some of the over-abundant watermelon juiciness. If I’m not serving it right away, I also wait to combine the lime juice until the last minute, so you don’t loose that refreshing punch.
Goodness:
Watermelon packs a punch of heart-healthy lycopene, a good source of vitamin A, loads of antioxidants to help combat those nasty free radicals and a whopping dose of vitamin C.
All that flavor and nutrition goodness in just over 25 calories a serving!
We loved it as a topping to fish as well as a summer salsa with tortilla chips. Try it; we think you’ll really like it.

Tried it for a party on the 4th. It was awesome. Lots of comments. That lime juice really added a yummy punch!
