Winter survival, family style

Tortilla Soup (adapted from my good friend Stephanie’s version) serves 12
1 med onion, chopped (I keep them big so I can pick them out)
2 cloves garlic, minced
2 Tbsp olive oil
2 lbs chicken, cooked and shredded (shortcut by using a roasted chicken)
1 can chopped tomato
½ 10 ounce can of Rotel (or one can tomato and one can green chilies)
1 can beef broth
1 can chicken broth
1 can tomato soup
1 ½ can water
1 tsp cumin
1 tsp chili powder
1 tsp lemon pepper
1 tsp salt
3 tsp Worcestershire sauce
1 Tbsp Tabasco (optional or serve on side)
Sauté the first four ingredients in the olive oil. Add remaining ingredients. Simmer for a few hours. The longer it simmers the better. Even better the second day.
Optional garnish: tortillas, shredded cheese, avocado, and/or sour cream

I think this is the perfect time of year to crank some Bob Marley tunes in the house. Help me chase away the winter chills:)
GREAT idea, Jo. And know the soup can be modified easily if you don’t have all the ingredients exactly the way they are listed. I used vegetable broth instead of beef and strained tomatoes instead of tomato soup and no rotel (or green chilis) because I didn’t have any. The soup is almost gone it’s so good; in fact I think it was better with less spice (to share with the kids anyway). You can easily add corn and/or beans also to make it even more hearty.
That soup sounds so delicious! I am going to have to try it. I have taken to baking during all these snow days. Not such a good thing for the waist line! But the kids and hubby have been happy!
Having your husband pull you around in the snow with the 4 wheeler helps…and the dog likes it too! Weeee…
