Pudding so healthy you can have it for dinner

This simple and tasty pudding recipe is more nutritious than what the great majority of Americans are choosing for dinner tonight. In fact, I think it makes a great choice for dinner. Imagine how thrilled the kids will be to tell their friends.
Two of the star ingredients are at the top of my superfood choices, and there’s an option for a third.
First is raw chocolate powder, more accurately called cacao (ka-COW), which is packed with an amazing amount of antioxidants and a host of other nutrients. If you don’t know much about it, check out this previous post or this fall post on cacao, but suffice it to say it’s fantastic for cell health, brain function, heart health and cholesterol issues.
The second star ingredient is avocado. If you read our Do Your Insides Spell Trouble for your Outsides posts you know just how important these healthy fats are for your cells. A great source of fats, fiber, potassium and folate.
Nutritious, delicious, filling pudding for any meal. How sweet it is!
I call it Chocolate Brain Pudding because I literally feel full and mentally focused when I’m finished.
Chocolate Brain Pudding
(serves 1-2)
1 ripe avocado
½ ripe banana
2 T raw cacao powder (or standard cocoa powder to get you started)
3 T agave nectar (or maple syrup)
Optional:
A dash of sea salt
A dash of cinnamon (another heart healthy super food)
Mix all ingredients in a blender. Add a touch of water or milk if you like a creamier texture. Chill and serve.
Enjoy!

Yum, I can’t wait to try it! Sounds delicious!
it is delicious and my kids love to have it in their lunch box –i think it makes them feel like their friends who have the pudding cups in their lunch box.
